Vegan Oatmeal Muffins

More and more people each day are seeing the effects dairy products are having on their bodies. if you don't know what being vegan means here are 4 facts about vegan living.
1. Veganism is a way of life that alters diet, clothing, and other decisions with the goal of ending exploitation of animals
2. Vegan foods are free of all animal products such as meat, eggs, fish, and dairy.
3. Approximately 5% of the US is vegetarian (close to 16 million people), and about half of those are vegan -- meaning about 7.5 million Americans abstain from all animal products.
4. Vegan living often reduces the intake of saturated fat, animal hormones, and cholesterol while increasing the intake of fresh fruits and veggies. That has the potential to reduce the risk of cancer, diabetes, obesity, and heart disease.
Ingredients
1 1/4 cups flour
1 cup quick oats
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/3 cup white sugar
1/4 cup apple sauce (1/4 cup apple sauce equals one egg)
1/2 cup water
1/3 cup oil
1 cup fresh or frozen blueberries (optional)
directions
Preheat oven to 350*F.
Mix flour, baking soda, baking powder, cinnamon and salt in a bowl and set aside.
In a separate bowl, mix apple sauce, sugar, water and oil together. (stream oil slowly in while mixing)
Add dry ingredients to wet ingredients and add oats. Carefully fold in blueberries.
Fill greased muffin cups or muffin liners and bake for 15 minutes until edges are brown. (or a skuwer comes out clean)
Remove from oven and cool in pan for 5 minutes. Carefully remove from muffin pan and cool on wire rack.
