funfetti pancakes

Ingredients

  • 1 ¼ cups all-purpose flour

  • 2 teaspoons baking powder

  • ½ teaspoon salt

  • 1 tablespoon white sugar

  • 1 teaspoon vanilla

  • 1 egg

  • 1 ¼ cups milk

  • 2 tablespoons butter, melted

  • 2 tablespoons chocolate chips

  • 1 tablespoon sprinkles (more for garnishing)

  • whipped cream (for garnishing recipe below)

Whipped cream Tip for a healthy vegan version Add

1/4 cup apple sauce

2 tablespoons vegan butter (butter sub)

1 1/4 cups almond milk

Ingredients

  • ½ cup whipping cream (35% works just fine)

  • ½ teaspoon vanilla

  • 1 tablespoon sugar

Directions

  1. place mixer bowl and whisk attachment into freezer for 10 minutes

  2. add whipped cream vanilla and sugar. whip on low speed tell frothy

  3. continue whipping on high speed tell until medium to stiff peaks form (make sure to not over whip)

Pancake Directions

  1. In a large bowl, mix together the flour, sugar, salt and baking powder. Make a circle in the center and pour in the egg and vanilla.

  2. In a small bowl add the melted butter to the milk and mix slightly together (butter clumps will form); mix into flour mixture until smooth. Add chocolate chips and sprinkles continue to mix tell incorporated.

  3. Heat a lightly buttered pan or grill over medium heat. using ¼ cup for each pancake Pour batter into the pan. Cook on both sides tell golden brown.

  4. Top with fresh whipped cream, rest of sprinkles and syrup
