Thin and Crispy Home Made Pizza

Andy Kindler once said "You can't go wrong with pizza, unless it's terrible pizza." i remember as a child, on Fridays my father would come home from work with a bag full of ingredients for pizza. as i grew up this tradition continued and our pizza making skills became more advanced. one of the greatest things about going to an Italian restaurant is their incredible pizza. thin, light, crispy and full of flavour. today I decided to show you how to get that same great pizza but at home for half the price.
Ingredients :
. one pizza dough cut in half (home-made or fresh from the store)
. pizza sauce (tomato sauce)
. good quality mozzarella cheese ( I like using saputo)
. veggies (onions, sliced tomatoes , red and yellow peppers , zucchini, mushrooms and so on....)
. olive oil
. circular pizza pan
Directions:
1. pre heat oven to 400 F
2. take pizza dough out of fridge and let it rest on a floured surface for 15 minutes
3. in the meantime place your pizza pan in the oven (this will ensure crispness)
4. dust flour over dough and rolling-pin. roll out dough into a medium-sized circle ( a bit bigger then your pan.it should be thin) once your done take the pan out of the oven (make sure to use gloves it will be hot) and drizzle it with olive oil ( cover the hole pan) and place your dough on top.
5. use a pizza cutter to trim off any access dough
6. brush your dough with olive oil making sure to cover the hole thing and place it in the oven tell it takes on a very light golden colour . ( it will brown fast so be careful not to leave it in to long. you want it to be a bit firm but not rock hard. if you see any big bubbles form just pop them with a fork )
7. take crust out of oven and let it sit for 2 minutes
8. add pizza sauce cheese and any other veggies you would like.
9. turn heat down to 350 and bake in oven tell cheese is melted and bottom is golden brown.
10. let pizza cool for a few minutes before you serve
